During a visit with a dear friend in Sweden in high summer, Nora Eisermann and Laura Muthesius from Our Food Stories were really craving pizza. In the winter that had made a tasty pizza dough with pumpkin, but since pumpkin was out of season they decided to use sweet potato instead. They topped the crust with our favorite vegan spinach pesto and gardenfresh mushrooms, tomatoes, carrots, fennel, and onions. It was in Denmark that Nora Eisermann and Laura Muthesius from Our Food Stories first fell in love with cinnamon rolls, and they came home to Germany determined to make their own vegan ones. It was actually one of their first forays into gluten-free baking, and the rolls turned out beautifully. They instantly became addicted—the smell and the taste put us into a swoon. It’s best to eat them while they’re still warm, on the day of baking, to make the most of their moist goodness.
